Matcha is a Japanese green tea ground from shade-grown tencha leaves into a fine powder. You whisk it into hot water or milk and drink the leaf, not just an infusion, so you get the full caffeine and antioxidant load.
Matcha contains caffeine plus L-theanine, which together give a calmer, longer alertness without the coffee crash. One serving has roughly a third of the caffeine of an espresso shot.
Sift 1 to 2 grams into a chawan. Add 60 to 80 ml of water at 70 to 80°C. Whisk in a brisk W-shape with a chasen for 15 seconds until a fine foam forms. Drink within minutes.
Ceremonial grade is matcha smooth enough to drink straight with water. It comes from the youngest leaves, stone-milled, with a sweet umami profile. Culinary grade is rougher and made for lattes and baking. Popcha sells ceremonial grade.
Matcha is rich in catechins (mainly EGCG) and provides a steady release of caffeine alongside L-theanine. Research links daily green tea consumption with cardiovascular and metabolic benefits, though it is not a cure for anything.
